Mount Van Cott
Mount Van Cott is just east of the University of Utah hospital and cancer research area, and is a great sunrise/sunset hike.
This trail is a lovely upshot of the Bonneville Shoreline trail of Salt Lake City's foothills. It's perfect for anyone visiting or working at the university who wants a hike that results in a fabulous view of the entire valley. To the south, you'll get a dramatic and rugged view of the Cottonwood canyons; to the northwest you'll get a shimmering view of the Great Salt Lake; and to the east, you'll see the infinite rolling hills of the Wasatch.
The trail is a bit strenuous and takes about 45 minutes to 1 hour to reach the summit even though it is only about 1 mile. Avoid this trail in the middle of the summer in the middle of the day--you'll overheat very quickly.
